Mediterranean Quinoa Salad

Ingredients:

  • 2 cups arugula
  • 1 can chickpeas
  • 1/4 cup feta cheese
  • cucumber diced
  • olives of your choice
  • handful of cherry tomatoes
  • 1 cup quinoa
    Greek Vinaigrette
  • 2 cloves garlic
  • juice of 1 lemon
  • 1 tsp dried oregano
  • black pepper
  • sea salt
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar

Directions:

Cook quinoa according to package directions. Set aside and let cool. Dice your vegetables. Mix arugula with quinoa and toss in all other ingredients. Prepare salad dressing by combining all ingredients in blender. Pour over salad and enjoy!
