Tender Roast + Kale Tacos

Ingredients:

  • 1 beef chuck roast
  • 3 cups kale
  • 1/2 red onion diced
  • lime
  • 1/2 tomato diced
    Avocado cilantro lime dressing
  • 1 avocado
  • 1/4 cup cilantro
  • 1 clove garlic
  • 1 tbsp fresh lime juice
  • 1/4 tsp black pepper
  • 1/4 tsp sea salt
  • 3 tbsp olive oil
  • 1/4 cup greek yogurt, low fat
  • warm water for thickness

Directions:

Cook a chuck roast in your crockpot the night before. Use to make tacos. Dice tomatoes, red onions and chop kale. Prepare avocado cilantro lime dressing by blending all ingredients together in blender or food processor. Add warm water to achieve desired thickness. Pour over tacos. Enjoy!
