Tilapia + Black Bean + Brown Rice Bowl


  • Tilapia filets - 1 per person
  • 1-2 tbsp extra virgin olive oil
  • 1-2 cups of brown rice depending on family size
  • Jar of your favorite salsa or make your own (healthier this way)
  • 1 can of black beans
  • 1 can of whole grain corn
  • 1 lime
    Southwest Sauce
  • 1/2 cup olive oil cage free mayo
  • 1 tsp white vinegar
  • 1 tsp water
  • 1 dash garlic powder
  • 1/8 tsp onion powder
  • 1/8 tsp cayenne pepper
  • 1/2 tsp chili powder
  • 3/4 tsp granulated sugar
  • 1/4 tsp paprika
  • 1 dash salt


Cook brown rice according to package instructions. Next, prepare your southwest dressing. Combine all ingredients in a bowl and whisk. Heat up your black beans and corn on stove in separate pots. Season tilapia with salt and pepper on both sides. Grill your tilapia on medium - high heat with olive oil. About 3-4 minutes on each side. Once fish is flaky, remove from heat and set aside. Prepare your bowls - rice first, corn, black beans, salsa, tilapia, drizzle southwest sauce on top. Squeeze lime juice over bowl and use for garnish. Enjoy!
