Sweet Potato Hash + Ground Turkey + Egg



  • 1/2 Sweet Potato
  • 1/4 lb Ground Turkey
  • 1 Pasture Free Egg
  • 1 handful of Spinach


Heat coconut oil on medium-high heat in a skillet. Add chopped (in 1/2 inch cubes) sweet potatoes to the skillet. Stir occasionally until cooked through and easy to cut in half with fork. Add large handful of spinach or kale and sauté for about 30 seconds. Add salt/pepper to taste. Transfer to a bowl. Add ground turkey to same pan and cook until browned completely. Add Salt/Pepper to taste. Transfer ground turkey to bowl and pour over sweet potato hash. In a separate small pan, spray coconut oil to coat the bottom of the pan. Crack an egg into cold pan (do NOT turn heat on yet- This is the secret to a perfect over easy egg). Once egg is cracked, turn on heat to medium and cover. Once yolk is fogged over completely, turn off the heat and transfer directly to hash bowl and top ground turkey with over easy egg. Enjoy!
