Open Faced Burgers + Sweet Potato Hash

Ingredients:

  • 1/4 lb Grass Fed All Natural Lean Ground Beef
    (Vegetarian? Try : Beyond Meat)
  • Iceberg Lettuce
  • 1 Slice Tomato
  • 1 Slice Red Onion
  • Micro Greens
  • 1/2 Sweet Potato
  • 1 Tbsp Coconut Oil
  • S+P to taste

Directions:

Form ground beef into one burger patty. Grill in small skillet or on grill. Assemble your burger with everything but the patty. Chop sweet potatoes into 1/2 inch cubes. Heat coconut oil in same skillet (cleaned out) on med-high heat. Sauté sweet potatoes until cooked through and slightly crispy. Add to plate and enjoy!
