Sweet Potato Toast w/ Avocado

Ingredients:

  • 1 Sweet Potato
  • 1 Avocado

Directions:

Peel a whole Sweet Potato and then thinly slice it (longways) into 1/4" thick slices. Brush or drizzle avocado or coconut oil on side and place in the toaster. Toast about 3-4 times until it is cooked all the way through and slighly brown. Top with smashed avocado, salt and pepper and other toppings that sound good! Fresh radishes, figs, eggs?!
