Egg Scramble

Ingredients:

  • 2 Pasture Raised Eggs
  • 1/2 cup of Fresh Spinach
  • Any other veggies: Broccoli, Cauliflower rice, Zucchini, etc.
  • This one is topped with avocado, grapefruit and a side of jicama

Directions:

Beat eggs in a small bowl. Sauté spinach and veggies in a small skillet on medium heat with coconut oil. When sautéed to your liking, add beaten eggs. Stir until cooked through. Top with avocado and any other toppings desired.
