Salad Bowl

Ingredients:

  • 1/2 Cup Ground Grass Fed Beef or Turkey
  • 1 Cup of Assorted Premade / Cooked or Chopped Veggies from the week
  • 1/2 Cup Arugula
    Dressing (*MP)
  • ⅓ cup olive oil
  • 1 juice of lemon
  • 1 garlic clove, minced
  • 1 shallot, minced (about 2 Tbs.)
  • 2 tablespoon of raw apple cider vinegar
  • 1 tablespoon zest of lemon
  • 1 teaspoon dijon mustard
  • ¼ teaspoon sea salt (or to taste)
  • fresh ground black pepper

Directions:

Brown ground beef in a skillet on med-high heat. Grill/roast your choice of veggies, or grab veggies already prepped from meal prep guide, toss all ingredients in a bowl with arugula. Blend dressing ingredients in a blender or bullet, pour over salad. Enjoy!
