Roasted Veggie Ground Beef Salad
- 1/4 lb of Ground Beef
- 1 Cup of Roasted Veggies (*MP)
- Spinach/ Mixed Greens
- 3 Sprigs of Green Onions (Chopped)
- 3-4 Tbsp of Coconut Aminos
- 1/2 tsp minced ginger
- Dash of Garlic Powder
Cook raw ground beef on medium/high heat in a skillet until cooked through. Chop green onions. Pour dressing ingredients into a small bowl and whisk until combined. Assemble salad: Greens first, grilled veggies next, ground beef on top. Top salad with green onions and dressing.
