Roasted Veggie Ground Beef Salad

Ingredients:

  • 1/4 lb of Ground Beef
  • 1 Cup of Roasted Veggies (*MP)
  • Spinach/ Mixed Greens
  • 3 Sprigs of Green Onions (Chopped)
  • Dressing
  • 3-4 Tbsp of Coconut Aminos
  • 1/2 tsp minced ginger
  • Dash of Garlic Powder

Directions:

Cook raw ground beef on medium/high heat in a skillet until cooked through. Chop green onions. Pour dressing ingredients into a small bowl and whisk until combined. Assemble salad: Greens first, grilled veggies next, ground beef on top. Top salad with green onions and dressing.
