Bell pepper Egg + Pesto Quinoa Toast
- 1/2 red bell pepper
- 1 tsp homemade butter
- 2 eggs
- 1 slice 100% whole wheat whole grain toast
- Quinoa pesto (from Trader Joe's)
- fresh parsley for garnish
Wash and Slice a red bell pepper in half. Remove the pit. Slice it in rings, and try to do so that when you set the ring down it lies flat on the counter. Next, heat homemade butter in a large skillet over medium heat. Set the bell pepper down in the skillet and crack an egg in the middle of each ring. Cover skillet with a lid and cook until the egg whites are solid and the yolk has fogged over. While the egg is cooking, toast your bread and smear it with quinoa pesto. The pesto and bell pepper makes a great pairing. Transfer bell pepper egg to a plate, add the toast, garnish with fresh parsley and enjoy!
