Honey Dijon Roasted Pork Tenderloin + Mashed Cauliflower + Veggies
- 1 (1 lb) Pork Tenderloin
- 2 Tbsp whole grain Dijon Mustard
- 2 Tbsp honey
- 1 Tsp minced fresh thyme leaves
- 1 sweet onion (thinly sliced)
- Salt and pepper to taste
Preheat oven to 400 degrees. Grease a baking dish with olive oil or homemade butter. In a small bowl, combine mustard, honey and thyme. Place sliced onion in a single layer in bottom of baking dish. Season your pork with salt and pepper on both sides, and then place on top of sliced onion in the baking dish. Brush half of the mustard mixture all over the pork. Cover with foil and bake for 25 minutes. Remove cover, brush with remaining mustard sauce, and put under the broiler for about 5 minutes. Pork should reach an internal temperature of 140-150 degrees. Remove from oven and let the pork rest for around 10 minutes. Slice the pork and serve with mashed cauliflower and fresh veggies. Enjoy!
