I've put together a recipe for my favorite meal at True Food Kitchen - Two Organic Eggs. I've tried to recreate it several times, but I think I finally got it right!
- 2 Cage Free Organic Eggs
- 1 Sweet Potato
- 1 Yellow Onion
- 1 lbs of Lean Turkey Breakfast Sausage
- 1 Red Bell Pepper
- Garlic Powder
- Salt & Pepper
- Coconut Oil
First, dice your bell pepper and onion.
Next, throw the turkey sausage, bell pepper and half of your onion into a bowl. Reserve the other half of your onion for the sweet potato hash. Grate some fresh black pepper, salt and garlic powder over the ingredients. Once you have your desired amount, mix the ingredients up with your hands until fully combined.
One pound of turkey sausage will make a lot of patties. So if you are only feeding yourself or one other person, you will have a lot left over. You can either cook them all at once, or you can form the patties and freeze them for later use. I like freezing them because it is so nice to be able to grab them and throw them in a skillet when you are strapped for time.
This is kind of a one pan wonder. I don't like to dirty a lot of dishes when I cook, so I was able to cook everything in one pan. First, I sautéed the reserved yellow onion with my diced sweet potatoes in coconut oil. Once those were about done, I made a space in the middle of the pan for the turkey patties. With the sweet potatoes still cooking around the patties, I grilled those patties for about three minutes on each side at medium heat. Once those were done, I scooted the sweet potato hash and turkey patties off to one side of the pan, and cracked two eggs into the pan. There was no need to add butter for the eggs because of the left over coconut oil and oils from the meat. I let my eggs cook to the exact consistency I prefer, and slid it on a plate.
It tasted just like True Food Kitchen. Now I can eat my favorite healthy breakfast on the weekdays!
