Hey there fellow fitness lovers! Today is National Spinach Day! I am super excited about this because I am in love with spinach. Why? Not only can you do so many yummy things with it, spinach is so good for you. Some people call it the world's healthiest food. Spinach is packed with Vitamin A, C, B, Iron, Calcium and Magnesium.
This is how I eat my spinach. How do you eat yours?
I sauté spinach in a litte bit of butter with tomatoes. Then I add my two scrambled eggs, and top it off with goat cheese, avocado and cracked black pepper.
