How am I just now hearing about this?! My mom called me the other day and told me she was making her own extract, and when she told me how easy it was I knew I had to try it. I did it, and I had to share it with you. Just in time too, because it takes six weeks for your herbs and zest and infuse in the vodka. That means if you do it this week, you'll have homemade extract in time for Christmas!

You can pretty much infuse anything, but I chose only what I had in my garden: rosemary, mint, orange and lemon. (The basil was for a different project)

Once you've washed the herbs and patted them dry, use the handle of your knife to pound or bruise the herbs. This causes all of the oils to be released from the herbs making it more aromatic. Your kitchen will smell so good!

Once you've zested the fruit, you just put each type into a small mason jar, fill it up with vodka (any kind), screw the lid on tight and let them sit for six weeks. After six weeks, drain the herbs out of the extract so you're only left with the liquid. Extract is good for use up to a year.
