Grilled Egg with Mexican Chorizo / by Brittney Hogan

Amanda Church, of On Track Wellness, is a Certified Sports Nutrition Specialist. Their website is full of healthy and delicious recipes. The recipe below really caught my eye and I can't wait to try it, so I had to share it with you!

This week we have another breakfast recipe for you! We had been wanting to make this one for quite a while and finally had the chance. The recipe comes once again from Mark's Daily Apple. I was just going to buy the pre-made chorizo to save time but thought better of it. If I make it myself like the recipe calls for I know what is going into it and it is a healthier option. I was worried that it would be too time consuming but it was actually really easy. I highly reccomend making the chorizo yourself according to the recipe. After making the chorizo you simply cut the peppers in half lengthwise, crack an egg inside and then sprinkle with chorizo. Make sure the grill is heated and then put them on and cook for 8-10 minutes. All that is left to do now is enjoy! The link to the recipe is as follows:
